Nanny's Sweet Potato Souffle |

This is a hand-me-down recipe. It taste sweet almost like a seet potato pie with streusel topping. Using baked sweet potatoes adds to the sweetness of the dish. Ingredients:
3 -4 baked sweet potatoes |
2 large eggs |
1/3 cup evaporated milk |
3/8 cup butter |
3/4 cup sugar |
1 teaspoon vanilla |
1 cup brown sugar |
1 1/2 cups self-rising flour |
1/3 cup butter, melted |
1 cup pecans |
Directions:
1. peel baked potatoes and place in a large bowl. Add remaining ingredients and mix well with a mixer until well blended. Transfer to a greased 2 quart dish. Mix all topping ingredients in a separate bowl until crumbly. Sprinkle crumbly mixture on top of dish. Bake at 350 degrees for 30 minutes. |
