Nanny's Lemon Pie 5 Star Family Favorite!! |

This is one of the many recipes from my grandmothers cookbook. She passed away in May of 2005 and I am recording her wonderful recipes for my family and the many generations that will follow. I hope you enjoy her recipes as much as we do. I have not made each one yet-so cooking time and servings may vary. Blessings from FOURMRANCHWIFE in Texas Ingredients:
1 1/2 cups sugar |
1/3 cup cornstarch |
1/4 teaspoon salt |
1 1/2 cups cold water |
1/2 cup fresh lemon juice |
5 eggs, seperated |
2 tablespoons butter |
1 -3 tablespoon lemon zest |
1 (9 inch) baked pie shells |
Directions:
1. Combine sugar, corn starch and salt in a large heavy saucepan; mix well. Gradually add water and lemon juice, stirring until mixture is smooth. 2. Beat egg yolks until thick and lemon colored; gradually stir into lemon mixture. Add butter and cook over medium heat. Stir constantly until thick and bubbly. Cook for 1 more minute, stir constantly. 3. Remove from heat, and stir in lemon zest. Pour into pie shell. 4. Top with meringue and bake according to meringue directions. I will be posting Nannys Meringue soon. You could also use Cool Whip or whipped cream, Nanny always had a very nice meringue on top of hers. |
