Great Coconut Pie Recipe from my Nanny ! Ingredients:
3/4 cup sugar |
1/4 cup cornstarch |
1/8 teaspoon salt |
3 cups milk |
3 egg yolks, beaten |
1 cup flaked coconut |
1 1/2 tablespoons butter |
1 teaspoon vanilla |
1 pie shell, baked |

Directions:
1. Combine first 3 ingredients in a heavy saucepan. Combine milk and egg yolks ; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Remove from heat and stir in coconut, butter and vanilla. Pour filling into cooled pastry shell. Cover with waxed paper, pressing to touch filling. Set aside until cool. Remove paper and cover with Merinque, touching crust all around. Bake in a pre heated oven 425 * for 6-7 minutes or until meringue is lightly browned- watch closely ! 2. You may skip the meringue and top w/ whipped cream. |
