This recipe is from my aunt, Virginia Cousins Walters of Petersburg, VA. Ingredients:
1 (9 inch) unbaked pie shells |
1/2 cup butter |
1 cup sugar |
2 eggs |
1 1/2 cups shredded coconut |
1 tablespoon lemon juice |
1/4 cup milk |
Directions:
1. Cream the butter and the sugar. Add the eggs, one at a time, and beat in well. Add the lemon juice, then the milk, and finally the coconut and blend all in well. Pour the mixture into the unbaked pie crust. Preheat oven to 450 F and place pie in oven for 10 minutes, then reduce the heat to 350 F and bake for a further 25-30 minutes, or until brown. |
