I don't know who Nancy is, but I have been making this banana bread for about 20 years! I think I got it out of an old cookbook, but it is a super moist banana bread. The key is using bananas that are turning black. Ingredients:
3 bananas, overripe |
1/2 cup sugar |
1/2 cup butter |
1 egg |
1 1/2 cups flour |
1 teaspoon baking soda |
salt |
Directions:
1. Mash bananas in a large bowl. 2. Add sugar and mix well. 3. Cut in butter. 4. Add egg and beat slightly. 5. In a separate bowl, mix together flour, baking soda and a dash of salt. 6. Gradually add to banana mixture. 7. Pour into a well-greased loaf pan. 8. Bake in a preheated 350 oven for 45-55 minutes. 9. A toothpick inserted should come out almost clean. |
