Ingredients:
4 large russet potatoes
3 tablespoons butter
1/4 cup cheddar cheese, grated
3 tablespoons green onions, chopped
4 large eggs
Directions:
1. Bake potatoes and scoop out insides.
2. Mix potato with butter, cheese, and green onion.
3. Restuff potato skins with mixture.
4. Make a well in center of each stuffed potato skin; crack egg into well.
5. Bake at 350°F for 15 minutes or until egg is set.
