This is my favorite potato salad recipe passed down from my grandma to my mom to me and my sisters. Ingredients:
4 cups cooked potatoes, sliced (or cubed) |
1 onion, mined |
1 1/2 teaspoons pepper |
1 1/2 teaspoons salt |
3 hard-boiled eggs |
1/2 cup miracle whip |
1/4 cup vinegar |
1 tablespoon mustard |
Directions:
1. In a large bowl combine potatoes, onion, salt and pepper. 2. Separate egg whites from yolks, chop up the egg whites and add them to the potatoes. 3. In a small bowl mash up the egg yolks and combine them with the miracle whip, vinegar and mustard. 4. Pour the dressing over the potatoes and gently toss them together to combine. 5. Chill in refrigerator for at least 2-3 hours before serving so flavors can meld. |
