This was something my dad always talked about his mom making. After I got married I finally called my Nana and got the recipe from her...It is excellent! Also, to make it more like a meal I'll add meat to the recipe. For instance, Chorizo or seasoned taco meat, just to give it that extra kick! Ingredients:
2 cups cornmeal |
1/2 cup all-purpose flour |
1 tablespoon baking powder |
1 1/4 teaspoons salt |
1 teaspoon baking soda |
2 1/2 cups milk |
2 tablespoons cooking oil (corn, vegetable, canola) |
1 tablespoon onion (dried or fresh, minced) |
1 cup sharp cheddar cheese, shredded |
1 (8 3/4 ounce) can whole corn, drained |
1 (4 ounce) can green chili peppers (seeded, rinsed, chopped) |
1/4 cup red bell pepper, chopped |
Directions:
1. In a medium sized bowl, mix all dry ingredients. 2. In a smaller bowl, mix wet ingredients. 3. Add wet mixture to dry mixture, blend. 4. Add in onion, cheese, corn, peppers, blend until smooth. 5. Bake at 375° for 25-30 minutes. |
