Ingredients:
1 3/4 cup(s) currants pour boiling water and soak overnite then drain |
2 cup(s) seedless raisins |
1 1/2 jar(s) mixed fruits |
2 teaspoon(s) allspice |
1 teaspoon(s) mace |
2 teaspoon(s) cinnamon |
1 tsp cloves |
1/4 cup(s) brandy or sherry |
3/4 pound(s) butter |
3 cup(s) sugar |
7 eggs |
4 3/4 cup(s) all-purpose flour |
1/2 teaspoon(s) salt |
1 teaspoon(s) baking soda |
1 tablespoon(s) vanilla |
Directions:
1. Pour boiling water over currants and let stand 5 minutes. Drain Well. 2. Rinse raisins and dry well on paper towel. 3. Combine all fruits, raisins, currants and spices with Brandy or Sherry and let stand overnite. 4. Cream butter and sugar, add beaten eggs and mix well. 5. Sift flour, salt and soda together. Add part of flour and beat. Add fruit mixture and mix with spoon. Add remaining flour and flavoring and mix well. 6. Bake in greased and lined 10 inch tube pan or 2 nine inch loaf pans. Bake 2 1/2 hours in loaf pans or 4 1/2 hours in tube pan. |
