This is a recipe from on line and tweeked by a couple in Whitianga, New Zealand. Ingredients:
4 ripe mashed bananas |
2 tablespoons sweetened condensed milk |
1/2 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1/4 cup brown sugar |
2 teaspoons baking powder |
1/4 teaspoon salt |
2 cups flour |
sugar |
Directions:
1. Combine all ingredients till just mixed. Do not overmix. 2. Scoop a heaping spoonfuls into greased muffin tins top each with a bit of sugar and bake at 350 (200 Celsius) for 20-25 minutes, until muffins begin to brown on top. Serve warm with butter. Makes 1 dozen. |
