Namak Paray (Crunchy Salty Crackers) ... are one of the very popular tea-time snacks. These are thin strips, made from a salty pastry / dough and deep fried in oil till golden & crisp. Ingredients:
1 cup plain flour |
1/4 tsp. baking soda |
1/4 tsp. salt |
1/4 tsp. cumin seeds, roasted |
1/8 tsp. ajwaain (carom seeds) |
pinch of kalonji ( nigella seeds ) |
1/8 cup oil |
warm water |
oil for deep frying |
Directions:
1. Mix first 6 ingredients in a bowl. 2. Add 1/8 cup oil and mix with your hands. Rub between your fingers so that flour is well coated with oil. 3. Gradually add sufficient water to make a stiff dough. Cover the dough and let it rest for 30 minutes. 4. Heat the oil in a pan on medium heat for deep-frying. 5. Roll out the dough on a lightly floured surface as thin as possible. 6. Cut into diamond shaped pieces & deep fry in batches till they turn golden from both sides. 7. Serve hot or cool completely and store in an airtight container. |
