This is a recipe that we adapted from my husbands grandmother-Enjoy!!! Prep time doesn't include cooking time for sweet potatoes if preparing them at home rather than buying them canned. Ingredients:
6 cups sweet potatoes, cooked and mashed |
1 (4 5/8 ounce) package vanilla pudding mix (cook and serve large pckge) |
1/2 cup sugar |
1/2 cup brown sugar, packed |
1 1/2 cups evaporated milk |
4 eggs, lightly beatened |
1/2 cup butter, softened |
1 tablespoon vanilla |
1 teaspoon ginger |
1 teaspoon nutmeg |
1 tablespoon cinnamon |
2 teaspoons salt |
3 unbaked pie shells |
Directions:
1. Combine all ingrdients in large bowl and mix well with electric or stand mixer. You could sub pumpkin pie spice for the spices-when I do I use about 11/2 Tablespoons. 2. Pour into the 3 pie shells-do not over fill. 3. Bake at 425 degrees for 15 minutes then turn down to 350 degrees and bake for an additional 50 minutes or until a knife in the middle comes out clean. Ovens and times vary so keep an eye on it. |
