A wonderful salad with both fruits and vegetables! *I am posting this recipe as it was written, but I actually doubled the fruits and veggies, kept the dressing ingredients as listed and found that it was the perfect combination! Ingredients:
1 large carrot, sliced |
1/2 apple, cubed |
1/2 pear, cubed |
1/2 red bell pepper, diced |
1/2 stalk celery, sliced |
1/4 english cucumber, cubed |
1/4 red onion, sliced |
1/4 cup mango, cubed |
1/4 cup cantaloupe, cubed |
1/4 cup grapes, sliced |
1/2 cup sugar |
3/4 cup vinegar |
1/3 cup salad oil |
1 -1 1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Combine oil, vinegar and sugar in a microwavable bowl and heat at 50% power until the sugar has dissolved. Whisk in the salt and pepper. 2. Pour the dressing over the prepared fruit and vegetables. Cover and marinate in refrigerator for at least 4 hours. 3. Mix well just prior to serving. Remove salad with slotted spoon and serve drizzled with marinade. |
