Nachos are great, but it takes a lot of them to fill anyone up. Mashed potatoes are good, but are rarely the center of attention. Ingredients:
1/2 teaspoon parsley |
1/2 teaspoon sea salt |
1/4 teaspoon oregano |
1/4 teaspoon hungarian paprika |
1/4 teaspoon chili powder |
1/4 teaspoon cumin |
1/8 teaspoon dried mint flakes |
1/8 teaspoon thyme |
2 tablespoons butter (melted) |
3/4 cup water |
2/3 cup instant potato flakes |
1/4 cup milk |
1/2 lb grilled chicken breast strips (precooked) |
1 cup bell pepper |
6 ounces diet pepsi |
10 inches flour tortillas, torn into small pieces |
2 ounces mexican blend cheese |
2 green onions, chopped |
1/4 cup lemon juice |
1/8 teaspoon ground ginger |
1/4 cup whole kernel corn |
1/4 cup salsa |
1/3 cup tortilla chips, crushed |
8 ounces mexican blend cheese |
1/4 cup sour cream (optional) |
Directions:
1. Layer 1:. 2. Heat water, butter, and spices to a rolling boil. 3. Add potato flakes, stir. 4. Add milk and stir until all potato flakes are dissolved. 5. Put in bottom of 2 1/2 quart oven safe casserole dish. 6. Layer 2:. 7. Add chicken, peppers, and diet pepsi. 8. Bake at 350 for 5 minutes. 9. Layer 3 Prep:. 10. Soak chopped green onions in 1/4 Celsius lemon juice and 1/8 teaspoons ground ginger for 10 minutes 11. Layer 3 Assembly:. 12. Add torn flour tortilla in an even layer (it's ok if pieces overlap slightly). 13. Top with cheese. 14. Remove onions from lemon &ginger mix - DO NOT throw liquid out! 15. Add onions & corn. 16. Bake at 350 for 5 minutes. 17. Layer 4: 18. Add salsa, spread evenly. 19. Sprinkle chips into an even layer. 20. Bake at 350 for 5 minutes 21. Pour 1/2 of lemon & ginger mix over everything. 22. Bake at 350 5 more minutes. 23. Layer 5:. 24. Pour over last 1/2 of lemon & ginger mix. 25. Top with cheese. 26. Bake 5 minutes. 27. Let sit for 3-5 minutes. 28. Top with sour cream and serve. |
