This is a great way to get your kids to eat beans and you will love it as well! You can add extra onions and canned or fresh jalapeno peppers to taste, but my kids love it this way! Ingredients:
1 (16 ounce) package sharp cheddar cheese, chopped |
4 green onions, cut into 4-inch pieces |
1/2 (8 ounce) package reduced-fat cream cheese |
1 (15 ounce) can ranch-style beans (such as ranch style®) |
1 (15.5 ounce) can pinto beans with jalapeno peppers and bacon (such as trappey's®), drained |
2/3 cup chopped fresh cilantro |
1 (10.5 ounce) bag scoop-shaped corn chips (such as fritos® scoops) |
Directions:
1. Pulse Cheddar cheese and green onions together in a blender until evenly chopped; add cream cheese and pulse until blended. Pour in ranch-style beans; pulse to blend. Blend in pinto beans and cilantro until smooth. Serve with scoop-shaped corn chips. |
