This is from what I had on hand. I even snuck an extra veg in there and got no complaints. Ingredients:
1 lb. ground beef |
1/2 cup chopped yellow bell pepper (or your favorite color) |
1 can (14-1/2 oz.) diced tomatoes, undrained |
1/4 cup water |
1 pkg. (1-1/4 oz.) taco seasoning mix |
3/4 cup sour cream |
doritos chips (any flavor) |
1-1/2 cups mexican cheese blend (your fav will work) shredded |
Directions:
1. HEAT oven to 350°F. 2. Brown meat and bell pepper in large skillet; drain, reserving meat in skillet. Add tomatoes, water and seasoning mix; stir. Cook 10 min., stirring occasionally. Stir in sour cream. 3. Layer some chips in 13x9-inch baking dish; cover with layers of half each of the meat mixture and cheese. Repeat layers. 4. BAKE 20 min. or until heated through. |
