Nachinka - Ukranian Cornmeal Casserole |

Given to me by a neighbor, a cross between, polenta, corn pudding quality. Serve with meat and poultry if desired. Unique but delicious spoon bread quality. Some versions even add grated cheese to the recipe Ingredients:
1 medium onion |
1/4 lb butter |
1 cup cornmeal |
1 tsp sugar |
1 tsp salt |
1 qt warm milk |
4 eggs well beaten |
1 tsp baking powder |
Directions:
1. Saute chopped onion in butter, do not brown. 2. Turn heat to low. 3. Add cornmeal to butter & mix well. 4. Add the sugar, salt & warm milk. 5. Stir slowly until cornmeal begins to thicken. 6. Remove from heat. 7. Add the eggs & baking powder, mix well. 8. Pour into a greased 3 qt. casserole. 9. Bake at 325 degrees F for 1 hour. |
