Taste testers liked this but could not identify the vegetable part. It is a real taste treat when you are looking for something out of the ordinary. From the American Diabetes Association. low-calorie margarine, curry powder, onion, shredded cabbage, boneless raw salmon, salt, pepper, lemon juice cvt Ingredients:
1 tablespoon low-calorie margarine |
2 tsp curry powder |
1 onion, thinly sliced |
3 cups shredded cabbage |
3/4 lb fresh salmon, skinned and cut into 2-inch chunks |
1/2 tsp salt |
1/4 tsp pepper |
1 tsp lemon juice |
Directions:
1. Spray casserole dish with nonstick cooking spray. Melt margarine in covered casserole. Add curry powder, onion, and cabbage, stir to coat. Cover and microwave on High for 4 minutes. 2. Stir. Mound cabbage in center of dish and arrange salmon around cabbage. 3. Sprinkle with salt, pepper, and lemon juice. Cover and microwave on High for 8 minutes. Stir. Replace cover and let stand for 3 minutes. |
