This recipe is a healthier version of other potato salads. Ingredients:
4 large potatoes |
1/2 cup olive oil mayonnaise |
2 tablespoons yellow mustard |
1/2 cup pickle juice |
1/2 cup onion, chopped |
4 hard-boiled eggs, chopped |
1 1/2 cups pickles, chopped |
2 teaspoons salt |
2 teaspoons garlic salt |
1 teaspoon black pepper |
Directions:
1. Peel and dice potatoes to 1 inch cubes. 2. Cook potatoes till done. 3. Drain and let cool. (putting in fridge or freezer and stirring occasionally will speed process). 4. Stir ingredients together and season to taste. |
