My stuffed Peppers Casserole |

This recipe is basically like my stuffed cabbage recipe. The stuffing is the same, as is the sauce. I don't like green or any color, peppers so I make my stuffed peppers casserole style. That way I use less peppers and can remove them from my serving. Ingredients:
2 large green peppers, capped, seeded, and cut in fourths |
1 1/2 lbs ground beef (i use 80% lean, it has better flavor) |
2 tablespoons extra virgin olive oil |
1 1/2 cups raw cauliflower rice |
salt & pepper (plus optional seasonings of your choice) |
1 (10 1/2 ounce) can condensed tomato soup |
1 (28 ounce) can diced tomatoes (any variety) or 1 (28 ounce) can crushed tomatoes (any variety) |
8 slices bacon (approx) |
pepper, caps |
Directions:
1. Directions. 2. Mix soup and tomatoes and set aside. 3. Measure out 1 1/2 cups(more or less if you prefer) cauliflower rice and mix with beef and seasonings. 4. If you want to add some garlic and/or onion powder, or more rice, do so at this point. Salt and pepper to taste. 5. Add large pieces of green pepper to bottom of lined slow cooker. 6. Add stuffing and top with sauce. 7. Cover with bacon slices and pepper caps then cover and cook on low for 6 - 8 hours. |
