Mincemeat has this stigma of being *yucky*, but it really is good and doesn't have to be just for the Holidays. Make it as a dessert for after a fine meal, you'll see! Ingredients:
pastry for a single crust 9 pie |
1 pkg (3 oz) cream cheese |
1 t sugar |
1 t brandy or apple juice |
1/2 tsp grated orange peel |
1 1/2 c mincemeat |
1/3 c chopped nuts (pecans taste really good) |
Directions:
1. Roll out pastry, on lightly floured board, to 1/8 thickness. 2. Cut into eight 4 circles. 3. Drape pastry circles over bottoms of 2 1/2 muffin cups (measure across the top) alternating cups so pastry shells don't touch each other. 4. Pleat pastry around cups with a fork. 5. Prick bottom of each shell. 6. Bake until golden brown about 10 minutes (depending on oven) 7. Let cool completely before removing from pans. 8. Beat cream cheese, sugar, brandy and orange peel until smooth. 9. Spoon an equal amount into each shell. 10. Stir together mincemeat and nuts. 11. Spoon about 3 T into each tart. 12. Cover and refrigerate for at least one hour. 13. Serve with Creme Fraiche and Coffee & Tea. |
