My Southern Chicken Salad |

This dish was made in a spur of the moment desire to make something quick and delicious.. and turned out superb!! Ingredients:
2lbs boneless, skinless chicken |
2 ripe avocados diced |
1 white onion diced |
1/2 cup black beans (whole) |
3 eggs(boil with chickend to be quicker) |
1/2 head of lettuce sliced thinly |
2 tomatoes diced |
1/2 can diced green chilies |
1 pkg favorite tostadas |
1/2 onion ( to be added to chicken while boiling) |
2 cloves of garlic ( 2 be added to chicken while boiling) |
salt if needed but highly doubt it.. flavors are so combined may not be needed.. |
pepper to garnish. |

1/2 cup olives.. |
Directions:
1. boil chicken wi/eggs add piece of onion.. cover and boil till done 2. remove chicken & let cool. 3. In large bowl combine diced items, tomatoe, avocado, onion & lettuce. 4. once chicken is cooled shred or dice.. and add to bowl.. 5. eggs once cooled & peeled.. dice in medium size pieces. 6. add mayo & garnishes(opt. salt) pepper.. and mix.. 7. then enjoy.. i did. |
