My Sisters Mac N Cheese Golden Oldie |

This is my sister Jane's Mac n' Cheese recipe. It was handed down from her Mother-in-law many years ago. It's the best!!! Ingredients:
1/2 pound(maybe a little more) elbow macaroni |
3 tbsps. butter - not margarine |
3 tbsps. flour |
1 tbsp. keen's powdered mustard (optional) |
note: i like to replace the mustard with a dash or 2 of tobasco sauce! that really adds a nice kick to it. |
3 cups 2% or homogonized milk |
1 yellow or cooking onion, finely chopped |
1/2 tsp. paprika |
1 tsp. onion powder |
1 large egg, beaten |
12 ounces sharp cheddar cheese, shredded |
1 tsp. salt |
1 tsp. fresh ground black pepper |

3 tbsps. butter |
1 cup seasoned bread crumbs |
Directions:
1. Preheat oven to 350 degrees F. 2. In a large pot of boiling, salted water cook the pasta to al dente. While the pasta is cooking, in a separate pot, melt butter. 3. Whisk in flour and mustard and keep whisking for about 4 minutes. Make sure it's free of any lumps. 4. Stir in milk, onion, paprika and onion powder. 5. Simmer for 10 minutes. 6. Very gradually add in the beaten egg. 7. Note: I stress - VERY GRADUALLY 8. Stir in 3/4 of the cheese. 9. Season with salt and pepper. 10. Fold the macaroni into the mix and pour into a 2-quart casserole dish. 11. Top with remaining cheese. 12. Melt the butter in a small frying pan and toss the seasoned bread crumbs to coat. 13. Top the macaroni with the bread crumbs. 14. Note: I like to top this macaroni dish with crushed Sour Cream and Onion potato chips. Ohhhhhhhhh yummmmm... 15. Bake for approximately 30 minutes. 16. Remove from oven and allow to set for five minutes before serving. |
