This is just a simple cold pasta salad using ingredients I had in the pantry/fridge. It's a great side dish to salmon (which is what we had) or chicken, pork chops, or steak. It's your vegetable and starch in one dish - all you need. Read more . You can add/subtract almost anything to this to fit your tastes. Ingredients:
8 oz. (dry) cooked salad macaroni (you can use whatever pasta you prefer) |
chopped roma tomatoes (i only had 2, but 3 would be better) |
1/3 cup chopped sweet onion (approx. - i don't measure, sorry) |
bunch of ciilantro (leaves only) chopped (about 1/3 cup) |
1 small can sliced black olives (drained) |
1 tsp minced garlic |
1/2 cup mayonnaise (more/less) |
1 tbls yellow mustard (frenchs, i just squirted it in) |
1/2 tsp dill weed - approx. (or you can use dill relish, or if you prefer, sweet) |
salt and pepper to taste |
olive oil (i drizzle with just before serving because it seems to soak up the mayo while in the fridge, just to moisten, and stir) |
Directions:
1. Add chopped tomatoes, onions, cilantro, olives, garlic to large bowl 2. Add cooked macaroni (or pasta) 3. Add mayo and mustard, stir in 4. Add dill weed (or relish), salt and pepper 5. Adjust seasoning and mayo to taste |
