My Shrimp De Jonghe

I love Shrimp De Jonghe. This one is FAB!
Ingredients:
1/4 cup peanut oil
1/2 cup flaked unsweetened coconut
1/4 cup breadcrumbs
3 tablespoons parsley (minced)
1 tablespoon garlic (minced)
3/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon cayenne
2 lbs shrimp (peeled, deviened)
1/2 cup dry sherry
Directions:
1. Heat oven 400.
2. Combine the oil, coconut, breadcrumbs, parsley, garlic, salt, paprika and cayenne.
3. Reserve 1/4 cup. Toss rest with shrimp to coat.
4. Pour sherry in a sprayed 9x13 baking dish.
5. Add shrimp.
6. Scatter on remaining mix.
7. Bake 15 minutes.
