something i made up for lamb (or chicken?), everyone makes sauce out of wine .. personally i like beer, it has a bolder flavour, and its different Ingredients:
1 (375 ml) bottle pale ale |
1 cup cream (thickened) |
1 tablespoon olive oil |
2 teaspoons garlic |
1 tablespoon golden syrup |
5 saffron threads |
1 tablespoon chopped parsley |
1 pinch nutmeg |
salt |
pepper |
Directions:
1. bring a saucepan up to temperature (HOT). 2. place olive oil in pan with garlic and fry quickly. 3. put saffron threads in and fry for 25 more seconds. 4. pour in pale ale. 5. season with salt, pepper, nutmeg. 6. reduce by half. 7. pour in cream. 8. add golden syrup and parsley. 9. stir 10. reduce till desired thickness. 11. if you reduce to far and sauce splits add more cream. 12. makes enough for one service! |
