MY SCRAMBLED EGGS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.
Ingredients:
1 quart firm tomatoes peeled and chopped
1 cup onion chopped
3 green peppers chopped
2 tablespoons meat drippings
1/4 cup finely minced parsley
1/2 teaspoon salt
1 teaspoon sugar
6 eggs slightly beaten
Directions:
1. Melt meat drippings in frying pan and cook onion and green pepper 10 minutes.
2. Add tomato and parsley then simmer 30 minutes adding salt and sugar.
3. Just before serving stir in eggs.
