My Roasted Vegetable Medley

Made thes last night for dinner. Delicious. You coul also use carrots,or asparagus ,onions or any other root vegetables you like. I also roasted a pan of potatoes.
Ingredients:
5 beets,peeled ,cut into 1-1-1/2 pieces
1/2 large head of cauliflower,cut into florets
8-10 brussel sprouts,cut in half
2 tb olive oil
salt,pepper and thyme to taste(or any herb you would like(rosemary,sage)
Directions:
1. Preheat oven to 400
2. Drizzle oil over vegetables,sprinkle with salt,pepper and herbs and mix well. Put on a foil-lined baking sheet and roast for 35-40 mins till browned and tender,stirring once or twice. Remove from oven,sprinkle a little sea salt and serve.
