I just threw this together on the fly, using some leftover salad ingredients that I had pre-cut for dinner last night, and it tasted so very yummy I just have to share it! I have to say, I am not positive about the measures, I didn't measure it. Ingredients:
1/2 lb elbow macaroni |
1/2 cucumber, sliced and quartered |
1/2 cup celery, sliced |
1/4 cup carrot, grated |
1 (10 ounce) can chicken |
1/4 cup bacon bits |
1/3 cup mayonnaise |
4 tablespoons ranch dressing |
Directions:
1. Boil the macaroni and drain. (when I'm in a hurry, I put the cooling macaroni in the freezer in a bowl.). 2. In a large bowl, mix together the vegetables, mayo and dressing. (If you wish to season do it now, I tend not to season it because the ranch flavor is what I like.). 3. After the macaroni is cool enough, mix together, and enjoy it heartily! 4. *There are a few times when I have actually eaten this slightly warm because I couldn't wait for it to cool all the way! It still tastes good that way too! |
