My Potato-chip Tortilla

A potato omelet, only this one uses potato chips! No peeling or slicing here.
Ingredients:
3 t olive oil, divided
1 white onion, halved and sliced very thin. or dice.
kosher salt
12 large eggs
1 8.5 oz bag thick-cut chips. (abou 10 c)
1 c water
Directions:
1. preheat oven to 350 degrees
2. heat 2 T oil in non-stick skillet
3. add onions ,salt and pepper
4. cook, stirring until soft
5. put in a bowl and wipe out the skillet
6. Beat eggs, and 1 C water in large bowl.
7. Lightly crush chips into egg mixture, let stand about 10 min, stirring occasionally
8. stir in onion
9. heat remaining 1 T oil in skillet
10. Add egg mix , cook till it begins to set-5 min
11. put skillet in oven, bake til eggs are firm and top is golden and slightly crisp-30 35 min
12. remove and let stand about 5 min, slide onto plate.
