At home, we are all down with cold. On the path of recovery, now though:) 2 days back when mom asked me to make carrot and leek soup, I walked into the kitchen with a running nose and after making this soup and drinking a bowlful in the kitchen, when I walked out, I felt I could breathe much better and I felt much stronger. I feel so happy that I made this soup all by myself, on my own, using my mind inspite of a horrid cold:) Try this soup when your down with flu/cold/fever. This will WORK LIKE MAGIC! You will be well in a day or two. Let me know if u try this n how u enjoy it. Ingredients:
1 cup carrot, peeled and chopped |
1 cup leek, chopped |
3 cups water |
black pepper |
7 cups vegetable stock |
1 cup water (of boiled vegetables) |
Directions:
1. Put 3 cups water in a heavy bottomed vessel. 2. Add chopped veggies. 3. Allow to come to a boil. 4. Once boiled, make a puree of the veggies in a blender. 5. Strain this puree. 6. In the meantime while preparing the puree, put 2 cubes of vegetable stock in a vessel containing 7 cups water. 7. Boil until cubes have dissolved completely in water. 8. Add stock to puree followed by black pepper. 9. Add 1 cup of water of the veggies (i. e. the water in which the veggies were allowed to come to a boil). 10. Allow to come to a boil. 11. Simmer for 10 minutes and serve immediately! |
