My Mother's Simple Potato Salad |

When my mother made this salad, I was surprised the dressing only consisted of three, simple ingredients. This recipe is pleasurable to make when you don't want to make a trip to the grocery store with a hungry stomach that desires something light and fresh (: Sorry if the measurements don't work out. My mother just eyeballs everything. Ingredients:
4 russet potatoes, cooked to tenderness |
8 -10 eggs, boiled and diced |
3 stalks celery, diced (can use more) |
1 cup ham, diced |
1 -2 apple, diced, depending on the size of them |
2 cups mayonnaise (or more) |
1/2 teaspoon sugar |
black pepper |
Directions:
1. Add the first five ingredients to a large bowl and set aside. 2. In another bowl, blend mayonnaise, sugar, and black pepper. 3. Combine the salad and the dressing together, tossing gently so the potatoes won't mash together. 4. Chill in the refridgerator or eat right away! Enjoy! |
