I'm not sure where my mother got this recipe, but she made a big batch of these for Christmas this past year, and I kept going back to the jar for more! She used pecans for her batch, but I suppose that walnuts or any other kind of nut would work.
Ingredients:
2 egg whites
1 cup powdered sugar
2 tablespoons brown sugar (optional)
1/2 teaspoon vanilla extract
4 cups nuts
1/2 cup melted butter
Directions:
1. Preheat oven to 325 degrees.
2. Beat egg whites.
3. Add powdered sugar (and optional brown sugar) and beat the egg white mixture until stiff.
4. Add vanilla extract.
5. Fold in nuts to coat with the glaze.
6. Spread melted butter on a cookie sheet.
7. Sprinkle nuts on buttered cookie sheet and spread them out.
8. Put nuts in oven and stir every 10 minutes (to avoid burning) until they are crispy and a light cream color.
9. Sprinkle lightly with salt to taste.
10. Allow to cool.
