This is much better if you use fresh lemon juice. And the mint leaves improve it too, if you can get them, but they're not always easy to come by, so you can leave them out. Also, I have subbed in quinoa for the bulgar wheat, which works OK. The cooking time is the time for soaking the bulgar wheat. Ingredients:
1 bunch parsley, chopped fine, stems removed |
1/4 cup bulgar wheat |
1 cup boiled water |
1 tomato, diced |
2 garlic cloves, minced |
1 lemon, juice of |
4 -5 mint leaves, chopped fine |
Directions:
1. Pour the boiling water over the bulgar wheat and let it soak for a few hours. When it's done, it will have absorbed all the water. 2. Mix the remaining ingredients together. 3. Serve cold. |
