My MIL gave me the 'ingredients only'...........she never measured anything. After several attempts, I got it right. I made her proud. I prefer to chop the veggies rather than grate (like KFC's cole slaw - which this tastes like). Servings are approximate. Ingredients:
4 -5 lbs cabbage |
2 large carrots |
2 green bell peppers |
1 medium onion (large if you prefer) |
1/4 teaspoon pepper |
1/2 teaspoon salt |
6 tablespoons sugar |
1/4-1/3 cup white vinegar |
mayonnaise (just enough to hold ingredients together) |
Directions:
1. In a food processor, chop cabbage, carrots, peppers and onion. 2. Chop them ONE-AT-A-TIME- not all together. 3. Put into a large bowl and add remaining ingredients. 4. Mix well. 5. Best prepared the day before you plan to serve to allow flavors to blend and juice to form. |
