Luscious chicken wrapped in soft gourmet tortilla flavored with some homemade Salsa. Wansoy leaves is a type of Herb similar to Kinchay and the usual Coriander. It will give the distinct Mexican flavor to this dish. Read more . If you want an all natural Mexican flavor, add some of this herb. This can be your main if you're not much of an eater. Ingredients:
gourmet flour tortilla (small) |
3 chicken breast |
bunch wansoy |
3 tbspolive oil |
4 medium red tomatoes (chopped) |
3 medium red onions (chopped) |
1 red bell pepper (chopped) |
1 small can of tomatoes |
pinch of sugar |
cheese |
salt and pepper |
Directions:
1. Boil Chicken breast until cooked. Set aside to cool. 2. Shred chicken breasts to small pieces. Set Aside. 3. Divide bunch of Wansoy into 2 batches. Mince the other half, then finely chop the other. 4. CHICKEN FILLING: 5. In a sauce pan, saute half of the chopped onions, shredded chicken breast, chopped red bell pepper and minced Wansoy. 6. Salt and Pepper to taste 7. SALSA: 8. In a dry bowl, mix chopped tomatoes, rest of the chopped onions, chopped Wansoy and canned tomatoes. Add 1 pinch of sugar, salt and pepper. 9. note: please make sure to pour a certain amount of canned tomatoes enough to dress the rest of the ingredients. 10. Wrap chicken filling with Tortilla. (wrap the lumpia way, or taco way) 11. In a hot flat pan, roast the chicken wrap until brown marks on the tortilla is seen. 12. Top it with the Salsa sauce and cheese! |
