I never liked meatloaf from anyone or anywhere until I figured out how to make it myself. Ingredients:
1 lb ground beef |
1 small white onion, chopped |
1/2 red bell pepper, chopped |
2 garlic cloves, minced |
1 cup fresh breadcrumb |
2 eggs, lightly beaten (optional) |
salt (to taste) |
pepper (to taste) |
2 teaspoons chili powder (optional) |
3/4 cup ketchup (plus 2 t for top of loaf) |
2 tablespoons mustard |
1/4 cup fresh parsley, chopped |
Directions:
1. Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Form the meat mixture into a loaf in a metal 9x5 pan. 2. Drizzle loaf with ketchup. Bake for 1 hour and 10 to 20 minutes. Remove from oven and let sit for 15 minutes before slicing. |
