My Marinated Roasted Red Peppers |

this makes for a nice lunch or snaek or side dish Ingredients:
12 freshly roasted red bell peppers in a broiler or on a grill broiler |
( blacken all over ) |
3 cloves of garlic sliced |
2 tlsp of fresh basil chopped |
1 tlsp of fresh tarragon chopped |
1 tlsp of capers |
salt and pepper to taste |
3 tlsp of extra virgin olive oil |
1 tsp of balsamic vinegar |
Directions:
1. After roasting the peppers seal them all in foil wrap for about 20 min’s ( makes it easier to peel ) Peel and seed the roasted peppers ,peel into inch wide strips , when finish drain 3/4 of the juice out of bowl – and add all of the other ingredients mix well – and let marinate for a few hours – serve at room temp- ( you can also use yellow or orange bell peppers or a mixture of all ) |
