Now that the weather is cooling a bit, soups start to be welcome. I love all sort of pulses, from beans to chickpeas to lentils, and this is one of my favourite soups Ingredients:
1 cup lentils |
2 carrots, diced |
2 cups chopped onion |
2 tbsp olive oil |
1 tbsp plain flour |
salt |
chives and strips of carrot to decorate |
Directions:
1. Wash the lentils. 2. Put in a saucepan together with the carrots and cover with water. 3. Cook until soft. 4. Blend to a fine puré. In the meantime fry the onion in the olive oil until lightly golden. 5. Add the flour and mix well. 6. Add 2 ladles of the lentil puré and mix well. Add the rest of the purée and thin down with some water. 7. Season. 8. Serve hot decorated with chopped chives and strips of carrot. |
