This is my house dressing because I invented this one day when I wanted something more than the bottled stuff. Other than blue cheese dressing, this is always available at home. Ingredients:
1 cup balsamic vinegar |
1/3 cup olive oil. (there is so much confusion and static and ego lately going on with olive oil- and that just muddles things up. just find an olive oil you like and go with it. yes, there are many exceptions however this is just salad dressing.) |
juice of 1/2 fresh lemon |
1 tsp salt |
1 tsp ground black pepper |
1 tsp dried oregano. if you have fresh use 2. |
1/2 tsp dried basil. if you have fresh, use 1. |
1 tsp heaping sugar |
2 tbsp water |
Directions:
1. Wisk all together well in a large bowl. 2. Pour into a container and let marinate overnight for best flavour. 3. You can serve it immediately, it is great then too. 4. Keep in a salad dressing bottle in your cupboard away from sunlight. 5. Makes a good rub for leg of lamb prior to roasting! |
