This is my own chili recipe and the title reflects the inability to make a small amount. It's just impossible! (until they come out with half can sizes) I've been making this w/variations for at least 20 years. Read more . Adjust heat to taste. Enjoy with corn bread.
Ingredients:
1 lb. lean ground beef
1/2 onion - chopped (sweet or yellow)
2 tsp. minced garlic
1 can (15 oz.) petite diced tomatoes (or crushed, which i usually prefer)
1 can (7 oz) el pato (mexican hot style tomato sauce)
1 can (15 oz.) black beans (rinsed)
1 can (15 oz) light red kidney beans (rinsed)
1 can (15 oz) chili beans in spicy sauce (s&w) or pinto beans (add more seasonings to chili)
1 can (7 oz) fire roasted green chopped green chiles
1 tsp cumin
1/2 tsp (or more) ground ancho chile pepper (or chipotle, pasilla or any other, per taste)
1 tsp mexican oregano
salt to taste
Directions:
1. In large pot, brown ground beef, breaking up to small pieces
2. Add onion and garlic to browning beef and cook, stirring till onion is clear
3. If necessary, drain fat
4. Add tomatoes, sauce, beans and chiles
5. Stir in and add seasonings
6. Bring to simmer and let simmer very low for up to 4 hours (or less)
7. Watch and stir occasionally, adding water or broth if necessary
8. Serve with grated cheese on top (optional)
