4 cups cherry tomatoes or 4 cups grape tomatoes, halved |
1/2 english cucumber, diced |
1/2 red onion, sliced paper thin |
1 cup crumbled feta cheese |
1 cup kalamata olive |
1 cup flat leaf parsley, chopped |
1/4 cup extra virgin olive oil |
1 garlic clove, minced |
1 tablespoon balsamic vinegar |
1 tablespoon lemon juice |
1 teaspoon honey |
1 teaspoon oregano |
salt & pepper |
Directions:
1. Combine Tomatoes, Cucumber, Red onion, Feta Cheese, Kalamata Olives and Parsley. 2. Mix dressing ingredients together and pour over salad. 3. Let sit in fridge for 1 hour. |
