I grew up on this. Easy to make. Best if made a day ahead and reheated. Thanks Gran! Ingredients:
8 slices bacon, diced |
1 large sweet onion, diced |
1 teaspoon salt |
4 tablespoons water |
1/2 cup cider vinegar |
6 tablespoons granulated sugar |
2 tablespoons fresh parsley, minced |
1/4 teaspoon ground black pepper, or to taste |
6 cups cooked potatoes, cooled, peeled and cubed |
Directions:
1. In large skillet, fry bacon until crisp. Remove with slotted spoon and drain on paper toweling. 2. Drain skillet of all but 3 tablespoons bacon drippings. 3. Add onion to skillet and saute until softened. Add salt, water, vinegar, sugar, parsley and pepper. 4. Bring to a boil. Pour over potatoes. 5. Toss gently. Add bacon and toss again. 6. Cover and chill overnight for best results. 7. Reheat prior to serving. |
