My Grandmas Minestrone Soup |

This soup is hearty and will warm you on a cold night! It brings back many memories for me and I thought I would share this recipe with everyone. Ingredients:
1 stick of pepperoni, sliced into 1/4 inch pieces |
2 quarts water |
1 diced onion |
1 clove garlic, chopped |
salt to taste |
2 tbsp tomato paste |
3 tbsp olive oil |
2 potatoes, diced |
1 small head of cabbage |
1/4 lb. spaghetti |
Directions:
1. Simmer pepperoni in water for 30 minutes. 2. Add the rest of the ingredients, except spaghetti and simmer for 30 additional minutes. 3. Break spaghetti into 1/4 inch pieces. Add spaghetti to the pot and simmer until pasta is al dente. 4. Sprinkle with parmesan cheese. 5. Serve with warm, crusty bead. |
