A simple homemade crust with a lemon filling that is baked and topped with powdered sugar. A favorite in my family and at work. Ingredients:
crust |
2 cups flour |
1/2 cup powdered sugar |
2 sticks of butter (softened) |
lemon filling |
4 eggs (i use jumbo) |
2 cups of sugar |
10 tablespoons of lemon juice (i use realemon brand, as long as it is 100% lemon juice) |
4 tablespoons of flour |
1/2 teaspoon baking powder |
Directions:
1. To make crust, mix together first two ingredients and then cut in butter. 2. Press into a 9x13 baking pan (ungreased). 3. Make a ridge. 4. Bake at 350 degrees for 15-20 minutes. 5. While crust is in oven, 6. beat your eggs slightly, add your sugar and the lemon juice. 7. Fold in your 4 Tbsp of flour and your baking powder. 8. When crust is done, pour mixture over your baked crust and bake another 25 minutes. 9. Cool completely. 10. Sprinkle with powdered sugar 11. *Note* Lemon Bars can be cut smaller or bigger, whatever your preference. And, I know I could just measure up the 10 tablespoons of lemon juice and be quicker about it but my Grandma always said, my recipe, my way . Besides, I like tradition. 12. Enjoy |
