Comfort food, great on a snowy day Ingredients:
1 lb onion, sliced thin |
6 tablespoons unsalted butter |
5 cups beef stock |
1 teaspoon salt |
4 slices french bread, 1/2-inch thick |
1 cup gruyere cheese or 1 cup mozzarella cheese |
2 tablespoons worcestershire sauce |
1 dash kitchen bouquet |
Directions:
1. Melt butter in a large saucepan and add onions, stir well. 2. Cover with a lid and cook over low heat for about 30 minutes or until onions are soft and transparent. 3. Remove the lid and continue cooking the onions until golden brown. 4. Stir in the beef stock. Replace the lid and simmer for 30 – 40 minutes. 5. Add Worcestershire sauce, Kitchen Bouquet and salt, if needed. 6. To serve, top bowl of soup with a slice of bread and 1/4 of the cheese. 7. If desired, place under the broiler until cheese is melted. |
