I made an attempt to make lemon bars but I had more ingredients than needed and that's how the cheese cake came up. Ever since this is the only cheese cake we make. It's is light and not too sweet with a hint of fresh lemon. The crust is so flaky just like a short bread cookie. This is so easy to make, you will see it yourself. Ingredients:
1 cup flour |
1/4 sugar |
8 tablespoons unsalted butter, room temperature |
16 ounces cream cheese, room temperature |
1/2 cup sugar |
3 -4 tablespoons grated lemon zest |
1 cup yogurt |
10 tablespoons fresh lemon juice |
3 large eggs, room temperature |
Directions:
1. Preheat oven to 350*F. 2. In a bowl mix by hand first 3 ingredients fir the base. Pat the dough gently over the bottom of an 8 pan and about 1 up the sides. Bake the base on the center oven rack until golden, about 25 minutes. Meanwhile prepare the topping. 3. Using a blender (you can also use electric mixer ) on medium speed mix ingredients in following order.: eggs, sugar,yogurt, lemon juice and zest, cream cheese till light and fluffy. You may have to stop the blender/ mixer once or twice to scrape the bowl with a rubber spatula. Spread the topping evenly over the base. 4. Bake on the center oven rack for about 1 hour,or until the center of the dish is set. 5. Chill in the fridge for several hours or over night. |
