My Favorite Veggie/Bean Soup

I love this recipe because it is so versatile. I always change up the veggies and beans according to what I have on hand. I also have tried different spice combinations; basil, red chili flakes, parsley, sage etc. I used to hate veggie soup till I made this one! This recipe is very healthy as long as you don't add salt since the lipton packet already contains quite a bit. Can be frozen!
Ingredients:
1 (28 ounce) can crushed tomatoes (or diced if you like tomatoe pieces)
2 (19 ounce) cans beans (i use black and or or red kidney)
1 (10 ounce) can green beans
2 (10 ounce) cans beef broth (plus the 2 cans of water)
1 cup frozen corn (i sometimes use canned)
3 -4 carrots
3 -4 celery ribs
1 small onion
2 -3 green onions
1 chicken noodle soup mix (i use lipton)
2 -3 bay leaves
Directions:
1. Puy everything in a big pot and boil for 10 minute.
2. Simmer till the veggies are tender (20-30 min.) The longer you simmer the better it tastes.
3. Enjoy!
