My Favorite Turkey Meatballs in Mushroom Gravy |

This is one of my absolute faves. Serves great with with brown rice and green beans. I also make a vegetarian version of this for my wife with Gimmie Lean vegetarian sausage Ingredients:
1 lb ground turkey breast |
1/2 cup chopped green onion |
1/4 cup chopped parsley |
1/2 teaspoon salt |
1 teaspoon olive oil |
1 cup sliced button mushroom |
1 teaspoon dried thyme |
salt and pepper |
1 cup vegetable broth |
2 teaspoons cornstarch |
Directions:
1. Mix together turkey, onions, parsley, and salt. 2. Shape mixture into 16 small meatballs; set aside. 3. Over medium heat, cook mushrooms in the olive oil for 2-3 minutes, or until tender. 4. Remove mushrooms from pan; set aside. 5. Add meatballs to hot pan and saute 3 minutes, until browned, turning frequently. 6. Return mushrooms to pan and add thyme, salt and pepper. Add 3/4 cup of broth and bring to a boil. Reduce heat to medium and simmer 3 minutes, until meatballs are cooked through. 7. Dissolve cornstarch in remaining 1/4 cup of broth and add to pan. Simmer another minute and serve over cooked rice with green beans. |
