My Favorite Spinach Salad |

This is my all time favorite spinach salad recipe, I put it together for the first time in high school and I've been lovin' it ever since! I hope you all enjoy! Ingredients:
bag of dole baby spinach |
1 medium, ripe tomato chopped |
1/2 cup red onion, thinly sliced |
12 oz bacon, crisp and crumbly |
1 large chicken breast |
1 hard boiled egg sliced |
bleu cheese crumbles to taste |
bleu cheese dressing |
fresh ground salt and pepper to taste |
marinade for the chicken |
1/4 cup balsamic vinegar |
2 tbs. soy sauce |
1/2 cup dry white wine |
Directions:
1. Marinade chicken for 30 minutes, then grill until an internal temp of 165 has been reached. Rest for 10 minutes after grilling. Cut into bite sized pieces. 2. In a large bowl, empty bag of salad, add all other ingredients, reserving dressing. I like to arrange the chicken in the middle and the rest of the ingredients around that, making a colorful circle decoration. 3. Serve dressing separately to pass at table. Enjoy! |
